Most buttons you can check in Viewfinder settings . Some of them are explained in description of the xml. HDRNet is an alternative for HDR, HDR+ and HDR+Enhanced. Don't use it in low light conditions. Leica adds shade/vignette to a photo. Don't use JWB and AWB at the same time. They are alternatives and they both are for white balance. For night / low light use Night Sight mode. Set also higher number of hdr frames for Night Sight. RES button is for higher resolution upscaled photos. Remember that it's not native resolution, it's upscaling - multiplying the same pixels. Personally I hardly ever use it.

Yes, I believe. And you can have a few GCams at the same time. So, you can test and decide.
I tested a lot of GCam ports and definitely the best till now in my opinion is MTSLCam_v4.1_MultiLibs. It gives amazing results, especially there are much more details comparing to other ports and MIUI camera app. Put configs file into folder created in internal storage and named ConfigsSettings8.3
