I can't test tonight because my green lens defy go to replacement tomorrow in warranty just i'm happy if i have a red lens for Gingerbread 
The Only risk is like Root :
If you root your device and use files explorer with root access and delete some files your device can brick but if you don't use no .
If you unlock the bootloader and don't modify , no risk .
But if it's real on Defy we know that a few hours later but why not it's for Atrix nobody say that it work on defy .

1. Your device is connected to your PC and in fastboot USB mode correct? Also you should be typing fastboot-windows oem unlock
The SDK recognize your device?
2. Some driver problem. Try this:
Windows 7 users, if you right click on "Computer" and select "Manage"
Once the computer management window opens click on "Device Manager"
In the list on the right window you will see your Android Device (assuming your phone is plugged in). Select it and then select "update driver"
Browse for the driver you downloaded with the android sdk.
Once you've updated the driver unplug your phone from the computer and then plug it in to another usb outlet.
AdbWinApi.dll, AdbWinUsbApi.dll must be in "fastboot" folder.
Boot loader mode.
Turn off phone. Hold Volume Up and Power On buttons.
Try these steps:
1. Turn off phone. Hold Volume Up and Power On buttons.
2. Plug usb to PC (with Windows)
3. Go to SDK\Tools\ and type: fastboot-windows oem unlock

The unlock is for the Atrix 4G (AT&T) only, as far as I understand.

Don't want to sound like a jerk, but when Motorola will decide to unlock the bootloader of the Defy (if they hopefully decide it) we will know about it . But first they need to reach an agreement with the carrier. Afaik, for the moment only two devices have been unlocked, both from AT&T: the Bravo, via a market application (by motorola), and the Atrix.
For the moment I hope too they will unlock the Defy, but I'm rather septic about if Tmobile or any other carrier like Orange will allow it.

i got original

build 3.4.2-108-jdnl-6
34.4.806.mb525.latam.en.01
i rooted and installed cwm and installed cm7.1
1 phone all o.k , other froze on google screen.
i tried goes to recovery but no luck.
i then tried to reflash it to this rom
shadow_defy_2.3.3_85_Orange.sbf
but phone froze on moto logo , i then tried 2 og the fixes i found in this post
1 time i got the phone to boot , but after i reinstall battery to put sim again stuck on moto logo.
i tired many other roms 2.2.2 or 2.2 2.1
all of them get me to moto logo.
is there any correct way to do it ?

you are being totally unreasonable.
- why would motorola -- the only one who have the complete source, including audio and gki part, need to base their work upon quarx'?
- GB for DX & D2 have been out for a long while now, 4.5.1-5x.
- 1% vs 10% incremental was a deliberate choice made by motorola, there's absolutely no technical difficulty whatsoever.
- the camera bug for current GB should be a devtree problem (much like what we had with early chinese 2.2 release), it only means moto haven't got time to update their devtree, that's all. Quarx can't fix camera gracefully because all he (or anyone except moto for that matter) can do is finding hacks and tricks (mostly dirty ones). motorola, on the other hand, don't need those hacks, because they have the source and they can change/update the kernel/drivers as they see fit.
